Chewy Oatmeal Coconut Cookies

I love hosting open houses to showcase a listing for a client because it means I get to make cookies to share with guests that come to see the home! They receive a little unexpected cookie treat for making the trip to see the home, and I receive joy-filled smiles from people I just met! This cookie is always a crowd-pleaser as it is basically just an oatmeal cookie but elevated with the addition of coconut. These are chewy, tender cookies that are just a mouthful of deliciousness!

 

 

Preheat oven to 375 degrees.

 

Ingredients:

 

 

Directions:

Cream together the butter, sugar, and brown sugar until light and fluffy. Add the eggs and vanilla and mix, scraping down the sides as needed.

 

Add the flour, baking powder, baking soda, and salt to the creamed mixture. Mix well.

 

Add in the coconut flakes and oatmeal, mixing just until blended.

 

Scoop out about 2 tablespoons of cookie dough at a time and place on a parchment-lined or ungreased cookie sheet.

 

Bake at 375 for 10-12 minutes, until lightly browned. Remove to a cooling rack after a few minutes. They will firm up as they cool. Enjoy!
