
Have you ever gone to Costco for one item, and then decided, well while I’m here, I’ll just get the rest of the groceries on my list … and then ended up with pounds of produce wondering how you’ll ever use all of it? Well I had one of those moments and only needed 1 lemon but bought a bag of 24! Now the challenge was on - what to make with all these lemons? Cookies of course!!! These lemony cookies are light as a feather, with a crispy outside and a puff of deliciousness on the inside. If you like lemon, you’ll definitely want to give this recipe a try!
LEMON BUTTER COOKIES
Preheat oven to 350 degrees.
Ingredients:
- ½ cup unsalted butter, room temperature
- 1 teaspoon fresh lemon zest
- 1 ½ cups sugar
- 1 teaspoon lemon extract
- 2 ½ cups flour
- 3 teaspoons baking powder
- 1, 8-ounce package of cream cheese, room temperature
- 1 tablespoon fresh lemon juice
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar, divided
- ½ teaspoon salt
Directions:
Cream together the butter, cream cheese, lemon zest, and lemon juice. Add the granulated sugar and mix until creamy. Add the eggs, lemon extract, and vanilla extract, and beat until light and fluffy.
Separately, combine the dry ingredients - flour, ½ cup of the powdered sugar, baking powder, and salt.
Slowly add the dry ingredients to the wet ingredients and mix until just combined (it will be very sticky). Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
Scoop out 2 tablespoons of cookie dough at a time and form into balls. Roll each ball in the remaining ½ cup of powdered sugar and place on a baking sheet lined with parchment paper, with room to spread.
Bake for 11-13 minutes. Remove to a cooling rack after a few minutes. They will firm up as they cool. Enjoy!
